STEAK TEMPERATURES

We cook our steaks to these industry standard temperatures to ensure consistency.  The pictures are for illustration only.

Blue - less than 29 degrees C

Seared outside but cool inside 100% red. Fats not rendered.

Rare - 30 to 56 degrees C

Seared outside mostly red inside. Fats not rendered.

Medium Rare - 57 to 62 degrees C

Seared outside fairly red inside. Most fats not rendered.

Medium - 63 to 68 degrees C

Seared outside lightly red inside. All fats rendered.

Medium Well - 71 to 76 degrees C

Hard sear outside, maybe a hint of pink inside. No fats remain.

Well Done - 77 degrees C and above

Hard sear outside, brown throughout. No fats remain.
